Weekend fun

This was my first “official” weekend having been back in Vancouver, and it was perfect! Friday started as it should, with drinks after work. We have a boardroom in our office upstairs yah everyone gathers after they’re off to enjoy some drinks. Another perk of the job I found; fully stocked booze fridge! Thank you!
Afterwards I went out for some drinks and oysters at Coast. First experience with oysters = pleasantly surprised.
Coast was followed by Chill Winston with some friends and downstairs to Guilt & Co to finish the night off with some board games.

Saturday was a relativity chill day, shopping for moms birthday gifts followed by dinner with the big brother and his wife.

I clearly reserved Sunday for a baking and cooking day! I made beef stew and pulled BBQ chicken (separately, of course) in the crockpots and finished it all off with some delicious chocolate chips cookies.

I have arguably the best chocolate chip cookie recipe you will find. I promise! These cookies keep the fresh from the oven feel until they’re gone… Which won’t be long.
The key to this recipe is the butter and … Instant vanilla pudding mix. They are pretty quick and easy to make too. I tried making half the batch with skor pieces as well and it gave it a little something.

The best chocolate chip cookies ever
1 cup softened butter
3/4 cup brown sugar
1/2 white sugar
2 eggs
1.5 tbsp vanilla
2 1/4 cup white flour
1tsp baking soda
1 cup chocolate chips
1 pkg instant vanilla pudding mix

This above ingredients will yield approx 36 cookies. Preheat the Oven to 350 degrees.
I start by sifting the flour and baking soda together and warring aside.
Than, in a separate bowl, cream together butter and sugars. Add in eggs and vanilla, beating till smooth. Add in the pudding mixture.
Slowly add in the flour mixture until the dough is nice and thick. Unless you have a good kitchen aide mixer I would suggest using a spoon/hands as the dough is very thick! Add in the chocolate chips and spoon the cookies onto a non stick cookie sheet and back for 10-12 minutes! The cookies should remain mostly in the shape and size you made and be soft and lightly browned around the edges!
